We celebrated Jenna’s birthday with this beautiful cake.  Jenna is from Oregon so we wanted to give her a little taste of home with this almond vanilla cake with Oregon triple berry filling.  Of course I am on the go so I was looking for easy and tasty!  I used two Pilsbury vanilla cake mixes.  Following the directions on the box but adding a 2 teaspoons of almond extract to them.  I love the hint of almond!  I cooked the two cake mixes in one 10 inch round and one 8 inch round cake pan.  The frosting is a butter cream, again I added 2 teaspoons of almond extract.  The butter cream frosting I made with 2 sticks of butter, a dash of salt, 1 teaspoon vanilla,half cup of milk and one and a half bags of powder sugar.  Cream the butter first, then add milk and powdered sugar until you get the consistency you desire.  To decorate it does need to be stiff enough to hold a peak.

I purchased a jar of Oregon triple berry filling at my local grocery store.  I let the two cakes cool then cut each in half to make my layers.  So I added a layer of filling between each of the cake pieces as I put them together.  The filling makes the cake moist and delicious!  I decorated the cake with a few flowers from my bouquet of flowers.  This is a very easy way to dress up a cake!
